Ingredients
  

Potato Base
  • 3 lb yellow potatoes cubed
  • 3 4 cup celery diced
  • 1 2 cup green onion sliced
Ranch Dressing
  • 1 cup vegan mayonnaise
  • 1 4 cup unsweetened plant milk
  • 1 tbsp dill chopped
  • 1 tbsp parsley chopped
  • 1 tsp garlic powder
  • 1 tbsp lemon juice
  • 1 2 tsp salt to taste

Method
 

  1. Boil potatoes until fork tender but not falling apart. Drain thoroughly.
  2. Cool potatoes until warm, not hot, so dressing stays creamy.
  3. Whisk mayonnaise, plant milk, dill, parsley, garlic powder, lemon juice, and salt until smooth.
  4. Add potatoes, celery, and green onion to a bowl. Fold dressing in gently until coated.

Notes
