Ingredients
  

  • 1 cup long grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 can 15 oz black beans, drained and rinsed
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 cup corn kernels
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • ¼ cup chopped red onion
  • 2 tablespoons fresh lime juice
  • ¼ cup chopped cilantro
  • ½ cup salsa
  • ½ cup plain Greek yogurt or sour cream

Method
 

  1. Rinse 1 cup rice under cold water until clear.
  2. Add rice and 2 cups water to saucepan and bring to boil.
  3. Reduce heat, cover, and simmer 15 minutes until tender.
  4. Fluff cooked grains with fork and stir in 1 tablespoon lime juice and cilantro.
  5. Heat olive oil in skillet over medium heat.
  6. Add black beans, cumin, chili powder, garlic powder, and salt.
  7. Cook beans 5 minutes, stirring occasionally.
  8. Warm corn in same skillet for 2 minutes.
  9. Divide cilantro lime rice into four bowls.
  10. Top each with seasoned beans, corn, tomatoes, onion, and avocado slices.
  11. Spoon salsa and Greek yogurt over each serving.
  12. Finish with remaining lime juice for fresh brightness.
