Ingredients
  

Curry Base
  • 2 cups sweet potato diced small
  • 1 can chickpeas drained and rinsed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup tomato puree
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp chili powder
  • 1 cup vegetable broth
Garlic Yogurt
  • 1/2 cup plain yogurt
  • 1 clove garlic finely grated
  • 1 tbsp lemon juice
  • Salt to taste

Method
 

  1. Heat oil in a large pot and sauté onion until soft and lightly golden.
  2. Add garlic and spices, stirring until fragrant and slightly toasted.
  3. Add sweet potatoes, chickpeas, tomato puree, and broth, then stir well to combine.
  4. Simmer until sweet potatoes turn tender but hold their shape, about 15 minutes.
  5. Mix yogurt, garlic, lemon juice, and salt until smooth and creamy.
  6. Serve curry hot with a generous drizzle of garlic yogurt on top.

Notes

Cook longer for softer texture or reduce time for firmer bites. Freeze curry without yogurt for best results. Stir gently to keep pieces intact. Add spinach or chili for variation. Store refrigerated up to four days and reheat slowly.
