Seitan Fajita Recipe

A sizzling vegetarian fajita featuring seasoned seitan strips sautéed with bell peppers and onions, served warm with tortillas and fresh toppings.

Ingredients
  

  • 8 oz seitan sliced into strips
  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lime juice
  • 8 small flour or corn tortillas
  • ½ cup salsa
  • 1 avocado sliced
  • Fresh cilantro for garnish

Method
 

  1. Heat olive oil in large skillet over medium high heat.
  2. Add sliced seitan and cook 4 to 5 minutes until lightly browned.
  3. Remove seitan from skillet and set aside.
  4. Add bell peppers and onion to same skillet.
  5. Sauté vegetables 5 minutes until slightly tender.
  6. Stir in minced garlic and cook 30 seconds.
  7. Sprinkle chili powder, cumin, smoked paprika, salt, and black pepper.
  8. Return seitan to skillet and toss evenly with vegetables.
  9. Cook 3 to 4 minutes until heated through.
  10. Drizzle lime juice over mixture and stir well.
  11. Warm tortillas briefly in dry skillet.
  12. Fill tortillas with seitan fajita mixture.
  13. Top with salsa, avocado slices, and fresh cilantro before serving.
