Peanut Tofu Power Bowl Recipe

A protein packed vegetarian bowl featuring crispy tofu, wholesome grains, fresh vegetables, and a creamy peanut sauce for a bold, nourishing meal.

Ingredients
  

For the Bowl:
  • 14 oz firm tofu pressed and cubed
  • 1 tablespoon olive oil
  • 2 cups cooked brown rice
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • ½ cup edamame
  • 2 tablespoons chopped green onions
For the Peanut Sauce:
  • ¼ cup natural peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon maple syrup
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons warm water

Method
 

  1. Heat olive oil in large skillet over medium heat.
  2. Add cubed tofu and cook 8 to 10 minutes until golden on all sides.
  3. Remove tofu from heat and set aside.
  4. In small bowl, whisk peanut butter, soy sauce, lime juice, maple syrup, ginger, and warm water until smooth.
  5. Divide cooked brown rice evenly into four bowls.
  6. Arrange shredded cabbage, carrots, cucumber, and edamame over rice.
  7. Top each bowl with crispy tofu cubes.
  8. Drizzle peanut sauce generously over each serving.
  9. Garnish with chopped green onions before serving.
