Buddha Bowl with Tahini Sauce Recipe

Ingredients
  

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 sweet potato peeled and cubed
  • 1 zucchini sliced
  • 1 red bell pepper sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups fresh spinach
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 2 tablespoons warm water
  • 1 clove garlic minced

Method
 

  1. Preheat oven to 400°F and line baking sheet with parchment paper.
  2. Toss chickpeas, sweet potato, zucchini, and bell pepper with olive oil.
  3. Sprinkle smoked paprika, cumin, salt, and black pepper evenly.
  4. Spread mixture on baking sheet in single layer.
  5. Roast 20 to 25 minutes until vegetables soften and chickpeas crisp.
  6. Rinse quinoa thoroughly under cold water.
  7. Add quinoa and 2 cups water to saucepan and bring to boil.
  8. Reduce heat, cover, and simmer 15 minutes until fluffy.
  9. In small bowl, whisk tahini, lemon juice, maple syrup, warm water, and minced garlic.
  10. Divide cooked quinoa into four bowls.
  11. Arrange roasted vegetables and chickpeas over quinoa.
  12. Add fresh spinach to each bowl.
  13. Drizzle tahini sauce generously on top before serving.
