A hearty vegetarian meal prep box featuring smoky BBQ tempeh, roasted sweet potatoes, fresh greens, and wholesome grains for a balanced, satisfying lunch.

Ingredients
  

  • 8 oz tempeh sliced into strips
  • ½ cup BBQ sauce
  • 2 medium sweet potatoes peeled and cubed
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice
  • 2 cups steamed green beans
  • 2 cups fresh spinach

Method
 

  1. Preheat oven to 400°F and line baking sheet with parchment paper.
  2. Toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and black pepper.
  3. Spread seasoned cubes evenly on baking sheet.
  4. Roast 20 to 25 minutes until tender and lightly caramelized.
  5. While vegetables roast, heat skillet over medium heat.
  6. Add sliced tempeh and cook 3 minutes per side.
  7. Pour ½ cup BBQ sauce over tempeh and coat evenly.
  8. Simmer 5 minutes until sauce thickens and glazes strips.
  9. Divide cooked brown rice evenly into four containers.
  10. Add roasted sweet potatoes and steamed green beans beside rice.
  11. Place BBQ tempeh strips into each container.
  12. Add fresh spinach to remaining space.
  13. Seal containers and refrigerate until ready to enjoy.
