  • 3 lb gold potatoes cubed
  • 1 2 cup celery diced
  • 1 4 cup green onion sliced
Mustard Dressing
  • 3 4 cup vegan mayonnaise
  • 3 tbsp yellow mustard
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 2 tsp salt or to taste

Method
 

  1. Boil potatoes in salted water until tender but still firm enough to hold shape. Drain well.
