Ingredients
  

Edamame Mixture
  • 2 cups shelled edamame thawed if frozen
  • 1/3 cup breadcrumbs plain vegan
  • 2 tbsp green onion chopped
  • 1 tbsp soy sauce or tamari
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt to taste
Serving Sauce
  • 1/4 cup vegan yogurt
  • 1 tsp lime juice

Method
 

  1. Preheat oven to 400°F and line a baking sheet.
  2. Pulse edamame, breadcrumbs, onion, soy sauce, oil, garlic powder, and salt until chunky and moldable.
  3. Scoop tablespoon portions onto tray and flatten slightly for even baking.
  4. Bake 12 minutes until edges turn golden and tops feel set.
  5. Cool 5 minutes for easier assembly handling, then serve with yogurt lime dip.

Notes

For softer texture, bake a minute less. For crispier bites, bake longer and cool fully on tray. Freeze shaped uncooked bites on a tray, then store bagged. Customize flavor with chili flakes, ginger, or herbs. Refrigerate leftovers up to 4 days.
