Ingredients
  

  • 1 cup dry quinoa
  • 2 cups water
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 zucchini chopped
  • 1 red bell pepper sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 2 tablespoons warm water
  • 2 cups fresh spinach

Method
 

  1. Preheat oven to 400°F and line baking sheet with parchment paper.
  2. Rinse 1 cup quinoa thoroughly and add it to saucepan with 2 cups water.
  3. Bring mixture to boil, reduce heat, cover, and simmer 15 minutes.
  4. Toss chickpeas, zucchini, bell pepper, and tomatoes with olive oil.
  5. Add paprika, garlic powder, salt, pepper, and oregano evenly.
  6. Spread vegetables on sheet and roast 20 minutes until golden.
  7. Whisk tahini, lemon juice, maple syrup, and warm water until smooth.
  8. Fluff cooked quinoa with fork and let it cool slightly.
  9. Divide spinach into four containers.
  10. Top each with quinoa, roasted mixture, and tahini drizzle.
