Ingredients
  

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 can 15 oz black beans, drained and rinsed
  • ½ cup diced red bell pepper
  • ¼ cup finely chopped red onion
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lime juice
  • ½ cup corn kernels
  • 1 avocado diced
  • ¼ cup chopped fresh cilantro
  • ¼ cup plain Greek yogurt or plant based alternative

Method
 

  1. Preheat oven to 400°F and line baking sheet.
  2. Pierce each sweet potato several times with fork.
  3. Rub skins lightly with olive oil.
  4. Place potatoes on baking sheet and roast 40 to 45 minutes until tender.
  5. While potatoes bake, heat skillet over medium heat.
